　　Lesson 73 Husbandry

　　At this time of the year, the rice harvest is approaching in Japan. The rice in my paddy-fields is now ripe and heavy with ears bent over and touching the water. As far as the eye can see, there are similar fields of gold, ready for the harvest. The farmer's year begins with spring ploughing followed by the sowing of rice in irrigated paddy-fields. Before autumn arrives, there is a great deal of work to be done. In July, the farmers reap wheat which has been grown in the drier fields on the hillsides. In August, they thresh it and keep it until the winter when they will have time to mill it.

　　The rice harvest lasts from September to early October. It is the most important event of the farming year and everyone helps, even those who live in the towns. During the harvest, the rice is cut by hand. The ears are gathered into sheaves which are then hung over wooden or bamboo poles to dry. Later, the rice is threshed by hand or by a threshing machine. After that, it is winnowed and put away in a store.

　　In Japan, farming is carried out intensively. Every inch of land is used. Terraced fields are a common sight on the steep hillsides and mountains. They have been cut out by hand over the centuries and are irrigated from mountain streams. The yield of rice per acre is high and the quality excellent.

　　Farming in Japan is always a family affair. The husband and wife work together throughout the year in all aspects of farming. Other family members help them during the busy sowing and harvesting seasons. In the past, Japanese farmers practiced gleaning. They went into the fields after the harvest and collected any remaining ears of rice. Today, this ancient custom has died out except in a few isolated areas.

　　The staple diet in Japan consists of rice and miso soup, which is made from soya beans. However, farmers also grow other crops such as maize. These crops are used not for sale but for subsistence. Though Japan is now a highly industrialised nation, farming is still an important industry and it continues to generate a good deal of income. Corn and other crops are now grown in large quantities, but rice is still the most important crop of all.
